Macieji Mlochowski (pronounced 'Mat-i-a’) is our wine and guest experience connoisseur. Originally from Poland, Macieji made the leap to Australia over 17 years ago. His award winning journey in hospitality led him and his partner from the heights of Australia's non alpine resorts to the sunny shores of Cairns. Macieji was instantly captivated by Waterbar & Grill’s unique cuisine and was eager to bring his fine wine and beverage expertise to our team. Dumi’s journey from the lively kitchens of Sydney to the tropical charm of Cairns has been truly remarkable. He developed a deep love for bold, hearty flavours, which he incorporates into every dish. With over 27 years of experience in the industry, including more than 18 years at Waterbar, Dumi’s expertise in meat selection and his dedication to consistency have made him an invaluable figure in the FNQ culinary world. Recognised for his hands-on approach and meticulous attention to quality, Dumi ensures that every dish reflects the passion and precision that define his craft.
